Will exercise for food

What could be better than a bike ride on a sunny day that takes you to a farmer's market? I cruised through the valley with it's cornfields, blackberry bushes, and dairy farms and arrived in the old town of Snohomish during the heat of the late afternoon. The farmers market was in full swing with a wide array of fresh vegetables - zucchini, cucumbers, lettuce, and kale to name a few; the overpowering scent of fresh fruits - peaches, apricots, strawberries, raspberries; baked goods; locally made honey and the most beautiful bouquets of flowers you could ever imagine. Of course sampling the goods was NOT optional - it was required!

I learned that you can eat the blossom of zucchini squash. Fill the squash blossom with grated mozzarella cheese and ricotta cheese with some chopped garlic. Place sliced tomatoes on the bottom of a baking dish, cover with the filled squash blossoms, drizzle with olive oil and bake at 350 degrees until the cheese is melted. Yum!

With peach juice dripping down my chin and through my fingers, I continued on my journey through the market to find the winery touting their best, paired with delectible chocolates. Knowing there was a 20 mile ride back home I passed on sampling the wine. I decided to save that for a trip to Chateau St. Michelle on Friday.

The day finished with a casual outdoor concert in town center followed by an amazing Indian dinner consisting of Cilantro Garden Soup, Tikka Masala and Rosemary Naan. Yes, this is why I exercise!
